This is a great recipe if you run out of
baking powder. This recipe is a double acting baking powder. According to the Food Scientist Shirley O.
Corriher a teaspoon of baking powder contains ¼ teaspoon of baking soda and ½
teaspoon of cream of tartar. Cornstarch
separates the soda and tartar and absorbs moisture to keep both ingredients
dry.
Yield: 13 ½ teaspoons
- 2 tablespoons cream of tartar
- 1 tablepoon baking soda
- 1½ tablespoons cornstarch
1. Mix cream of
tartar and baking soda and cornstarch together and use as a substitute for 1
teaspoon of
baking powder.
2. It is best to mix
as needed rather than mixing a large amount at a time.
3. Keep in a tightly
covered container.
