Portobello Caramelized Vidalia Sandwich



          Remove the crusts before slicing the bread and save for croutons, stuffing or bread crumbs.

  • 2 junior loaves of bread ( 6 slices) cut lengthwise and toasted
  • 2 portobello mushrooms, broiled and sliced
  • 1 cup caramelized Vidalia onions (caramelized recipe)
  • ½ cup shredded Swiss cheese

1.  Top 3 bread slices with ⅓ mushroom slices, ⅓ onions and ⅓ cheese.

2.  Place under broiler to melt cheese.

3.  Top each with another slice of toast.
