A couple of cooked and crumbled bacon
slices may be added to the beef mixture for an extra treat.

- 2 tablespoons butter
- 3 cups (10 ounces) sliced mushrooms
- 1 onion, halved and sliced
- ¼ teaspoon thyme
- ¼ teaspoon salt
- 8 ounces ground beef
- ½ teaspoon freshly ground pepper
- ⅛ cup shredded cheese (cheddar, Swiss or bleu)
- 2 super size English muffins, toasted
1. Heat butter in
sauté pan; add and cook onion for 5 minutes; add mushrooms, thyme and salt and
cook until liquid
from mushrooms has evaporated, stirring occasionally.
2. Mix beef,
pepper and cheese and form into two patties. Broil muffins until golden brown.
3. Sauté beef
patties, rare to medium rare. Place a beef patty on bottom half of muffin, add
mushroom mixture and
top with a muffin half.
