Sandwich Fillings:Egg Salad

Makes 4 servings

  • 8 hard boiled eggs, peeled, see note
  • 2 oz stuffed green olives
  • 1 small clove garlic, minced
  • 1 small rib celery, minced
  • 1/4 cup minced fresh parsley
  • 1/2 cup mayonnaise
  • 1 tsp prepared mustard
  • 1/4 tsp fresh ground black pepper

  1. Chop eggs and olives.
  2. Add garlic, celery, parsley, mayonnaise,mustard and black pepper.
  3. Stir well to combine.

note:To make an easy job of chopping the peeled, hard boiled eggs, place egg in egg slicer and slice.  Carefully, pick up egg slices, keeping them in tact and lay slices in slicer in opposite direction and slice.  Again, carefully pick up egg slices and put back in slicer, standing egg on end and slice once more.  Pick up slicer and tip  egg over into a bowl.  You will have a perfect minced egg  ready to turn into a salad.  You might have to try this a couple of times before its perfect, but you will lose nothing by trying.  If  it doesn’t work the first couple of times, just put the eggs in a bowl and finish chopping by hand or just leave the eggs in a coarse chop and if anyone remarks on the size of the egg pieces just tell them, “that’s the way I wanted them”.
