Bologna and Pickle Salad
When we were in grammar school, we frequently had this sandwich for lunch. It was and still is one of my favorites. It’s much easier to prepare now with the food processor than it was back in the forties, when Nanny ground it by hand with a food grinder that was screwed to the counter of the old " Hoosier Cabinet" wikipedia that stood in our kitchen.
Makes 4 servings
- 1/2 lb German (Wonderbar) bologna
- 20-24 slices old fashioned dill pickles (NOT KOSHER or POLISH)
- 1/3 cup mayonnaise
- 2 tsp Dijon mustard
- In small food processor, chop bologna and pickles.
- Add mayonnaise and mustard and mix well to combine.
