Slow Roasted Tomato Spread





     This delicious spread can also be made into a dip by adding 1 tablespoon each of sour cream and mayonnaise. The recipe can also be doubled.

Yield: 8 servings

  • ½ cup slow roasted tomatoes, chopped
  • 4 ounces cream cheese
  • 1 tablespoon sour cream
  • 1 tablespoon mayonnaise
  • 2 tablespoons minced red onion or 1 thinly sliced scallion, green and white parts
  • 1 dash hot pepper sauce
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

1.  Purée the tomatoes, cream cheese, sour cream, mayonnaise, red onion, hot pepper
     sauce, salt and pepper in a small food processor.

2.  Serve at room temperature on bread or crackers.
