Prosciutto Roasted Figs



Yield: 13-15 servings

     These are delicious hot or at room temperature.  Fresh figs have a very short season so when you see them in the market grab them, they may not be there next week.  This recipe is very easy to increase or decrease and is a Tyler Florence recipe.

  • 40 small fresh mission figs
  • 4 ounces Manchego or Maytag blue cheese
  • 20 slices prosciutto, halved lengthwise
  • Freshly ground black pepper

1.  Preheat the oven to 400°

2.  Make a small slit in the side of each fig and stuff a raisin-size piece of cheese in the opening.

3.  Wrap a piece of prosciutto around each to enclose like a little cocoon. Stand the figs on a sheet pan.

4.  Bake for 12 to 15 minutes so the prosciutto melts slightly and forms a skin around the figs. Season  with lots of ground black pepper.
