Bread Dough Intensifier

      This recipe will give a high rise, promote yeast growth, lighten texture, improve  flavor and shelf life of bread. All of the ingredients for this recipe can be purchased in a health food store. This will only cost $ .23 cents an ounce compared to other well know brands that use the exact same ingredients but cost $1.00 an ounce. I have used this for many years and am more than satisfied with the results.



Makes 40 servings



1½ cups Vital Wheat Gluten

1 cup Diastatic Malt Powder

⅛ cup Ascorbic Acid



1.  Mix all ingredients (21 ounces) together. Ingredients may be halved.



2.  Use 1 tablespoon of intensifier per 3 cups of all purpose or bread flour.



3.  Use 2 tablespoons of intensifier per 3 cups of flour that includes whole wheat, rye flour or any whole grain.

4.  Use also in any bread that has fruit, seeds or anything else that would inhibit its rise.
